While they are not complete records (in part because the Nazis destroyed many, and because many people died before they could be properly recorded), it allows us to make a fair estimate of how many died at each camp. Even so, records were largely kept of who arrived, to the point that somewhat reliable numbers are available, right down to listing names of victims there (for example the Dutch exhibit at the Auschwitz Museum lists every Dutch victim there). This stopped once large numbers of Jews began to arrive, largely because they were killed off quickly enough to make it redundant to keep a record of them. Every prisoner before this point (largely consisting of Polish and Soviet POWs, Communists, other political prisoners, and others targeted not just for being Jewish) were photographed and recorded. This is especially true for Auschwitz before it became an extermination camp in line with Operation Reinhard in 1942 (that is to say, the deliberate policy to kill European Jewry).
